Vegan Bell Beefer

Just because Taco Bell discontinued the Bell Beefer doesn’t mean we can’t make a Vegan one at home and BETTER of course! If you like Sloppy Joes and Tacos, then this sandwich has your name all over it!

Bell Beefers have been discontinued since the Clinton administration (mid 1990s) but they still maintain a fervent fan base of folks demanding Taco Bell bring it back. I remember eating them every so often, and thinking that they were just OKAY. I mean, even for Taco Bell, I don’t remember them being anything special. The only thing cool about them is they are a Taco Sloppy Joe!

Now that said, we of course can make these at home and make them way better than anything Taco Bell has mustered. It’s a simple concept, taco seasoned ground beef, cheese, tomatoes and lettuce on a bun! Naturally I had to add some sauce, so I whipped up some of the beloved Creamy Jalapeño Sauce too!

the meat

I used Impossible for this, but you can use whatever vegan meat you have at your disposal. You could even use TVP and rehydrate it in some beefless broth! Or make some Vegan Ground Beef with Tofu using THIS RECIPE!

Taco seasoning

If you have a pre-made Taco Seasoning, then by all means go ahead and use it! I do have a Taco Seasoning Recipe that is much better though!

Fresh Veggies

Diced tomatoes and iceberg lettuce. I’ve said it once and I’ll say it again…

For the lettuce, it has to be crisp Iceberg! No fancy stuff, save that arugula or baby spinach for later!

the Sauce

The original Bell Beefer didn’t come with any sauce, so I had to remedy that and slap on some Creamy Jalapeño Sauce! Recipe HERE!

Cheese

I recommend grating your own vegan cheese if possible. The texture is far superior, I usually grate a Daiya Cheddar block.

Also, don’t feel bad if yours doesn’t look my photo! These are SLOPPY! I had to definitely style that thing and it was a pain in the butt! Here’s a good example of what I mean!

storage

Leftover meat and veggies can be stored for 3-5 days. If you make this for 1-2 people you will definitely have some leftovers. And since Taco Bell’s menu is the same thing but in different combinations, you can make…

Vegan Bell Beefer

Ingredients

Taco Meat

  • 1 pound plant-based meat (like Impossible or Beyond Meat)
  • 3 Tbsp Taco Seasoning (Recipe link in blog post)
  • 1/2 - 1 cup water
  • Lime Juice to taste

Bell Beefers

  • 4 Burger Buns
  • Shredded Iceberg Lettuce
  • Diced Tomatoes
  • Grated Vegan Cheese
  • Vegan Sour Cream or Vegan Creamy Jalapeño Sauce

Instructions

  1. In a skillet over medium heat, add a little cooking spray or oil, and add in the plant-based meat. Crumble and spread it out evenly. Let it sit for a good 3 minutes to brown.
  2. Stir the meat around, then add in the taco seasoning and stir to coat. Once meat is no longer pink and is cooked through, add in the water and lime juice if using. Stir to combine. Reduce water to desired consistency. Taste and adjust for seasoning.
  3. Toast your burger buns, and then assemble the Bell Beefers as follows from bottom to top: bottom bun, Creamy Jalapeno Sauce, Taco Seasoned meat, grated vegan cheese, tomatoes, lettuce, more sauce if desired on the top bun and enjoy!
