Taco Bell Potatoes

The fan favorite POTATOES but BETTER! Plus we’re making CHEESY FIESTA POTATOES, A SPICY POTATO TACO AND A BEEFY POTATO-RITO!

So the potatoes at Taco Bell are already vegan, and they’re not bad (though the ones I made are better 😎) but for vegans, we typically just add them to our custom orders. For actual potato based dishes like the Cheesy Fiesta Potatoes, Spicy Potato Taco and Beefy Potato-rito, we have to order those “al fresco” which means no cheese sauce, sour cream, cheese, creamy jalapeño sauce and no ground beef! AKA, kinda boring!

The good news is, we can veganize all of them fairly easily!

First off, this recipe makes a lot of food, so feel free to half it. But personally, I liked having a bunch of potatoes, beef and sauce handy. It was pretty awesome to be able to throw a quick taco or burrito together by simply heating some stuff up.

  • Potatoes: These are pretty simple, we’ll just be dicing and seasoning some potatoes. Then dredging and deep frying them! You can air fry if you prefer, just spray them with some cooking spray, air fry at 400° F in 5 minute increments, flipping and spraying in between, until they are golden brown. They are not nearly as good as the deep fried version, but they are still pretty good!
  • Nacho Cheese Sauce: We’ll be making a quick and easy Vegan Nacho Sauce!
  • Creamy Jalapeño Sauce: Of course we gotta make the iconic Cream Jalapeño Sauce too!
  • Taco Seasoning: feel free to use store-bought but I prefer my homemade Taco Seasoning!

Ingredients
  

Potatoes

  • 4 pounds Russet Potatoes
  • 1 cup All Purpose Flour
  • 2 – 3 Tbsp Taco Seasoning

Instructions

  • Wash and peel (or leave the skins on). If peeling, wash off the potato funk after peeling, then dry them off.
  • Dicing the potatoes is easier shown than told, so either watch my video above, or THIS VIDEO too!
  • Once your potatoes are diced, add them to a bowl and cover with some water for about 10 minutes. Then drain and pat dry.
  • In a large bowl, combine the flour and taco seasoning. Toss your cubed potatoes until they are all thoroughly coated.
  • Add some neutral oil (like peanut, vegetable or canola) to a large, deep rimmed skillet or Dutch oven, and bring it up to 350° to 375° F. Then fry your potatoes in batches, careful not to overcrowd the pan. Fry until golden brown, about 8 – 10 minutes. Let them rest on a wire rack and sprinkle with salt immediately.

Potato Soft Taco

  • Add some potatoes to a tortilla along with some shredded lettuce, shredded vegan cheese and Creamy Jalapeño Sauce!

Now that you have everything whipped up, you can make whatever you want! Go ahead and make any of the above dishes, or feel free to mix and match! All of these things go super well together, I have been subsisting off of them for the past few days and I'm not even close to being burnt out on them yet!

  1. I made the creamy jalapeno sauce for a party and it was super easy and delicious. People literally asked me if they could bring some home, which is pretty impressive for a sauce. It made my tacos so much better!
