Oyster Mushroom Skewers
Oyster Mushrooms are Super MEATY, and perfect for the BBQ ! Eat ’em straight off the skewer or make a sandwich with ’em!

I’ve used Oyster Mushrooms in the past, but not in a while, and after making these Skewers I will definitely be working with them more soon! They are super meaty, delicious and they grill up fantastic. Perfectly browned with a little char, it’s got all the flavor of traditional BBQ!

why you’ll dig Oyster Mushroom Skewers
First, they are very easy to put together. We just need to whip up a simple marinade, give ’em a dunk and then skewer them and grill em! You can totally make these at home for yourself, or bring them to a friend or family BBQ and make some for everyone!

And they are great on their own, or you can always slap ’em on a bun! I made some sandwiches with some BBQ Sauce and Coleslaw, and then another with Chimichurri and Pickled Onions and they were both finger licking good!!

Obviously we need some Oyster Mushrooms. Now the ones I’m using are the Cluster Mushrooms, not the King Oyster (sometimes called Trumpet Mushrooms) which are the large single stalks.

Where I live in Southern California, there’s really two kinds of places that I know of where I can get them. There’s Whole Foods who sells the Small Hold brand. These are really good, but also very expensive at basically $20 a pound.

That’s why I highly suggest hitting up your nearest Asian Market where they are way cheaper. At my nearest 99 Ranch they are about $10 a pound, so if you can, get them somewhere like that.

For the Marinade, it’s a simple concoction of Vegan Mayo, Soy Sauce, Water, Vinegar and Hot Sauce. I’m also using some of my homemade BBQ Rub, but you can always use a store-bought rub or seasoning blend of your choice.

How to make Oyster Mushroom Skewers
Like I said, this is quite easy. First I like to separate and cut off the longer stems on the mushrooms. I find that they can be too chewy. But you can use them in a stock or soup. You can shred or finely mince them and cook them into a pasta sauce. They are definitely edible, so don’t throw them out!

I don’t personally wash my mushrooms unless they are really dirty since getting them wet can make them slimy or mushy. If you do wash yours, just gently pat them dry and use as little water as possible.
Next we’ll throw together the marinade.


Add the mushrooms, and toss them with clean hands. I recommend doing this right when you are ready to grill. I wouldn’t let them marinade too long as they can get mushy in my experience.




Then grab some Skewers. I like to use flat metal skewers, but use whatever you have handy. We’ll wanna pack them relatively tight. This is so they stay put when we flip them on the BBQ.




Heat up your BBQ Grill so it’s nice and hot (I usually go for about 400 – 450F). Grease it up with a paper towel soaked in a high smoke point oil, then lay down your skewers.


If your grill is at a good temperature, you should immediately see some smoke coming off the grill as the mushrooms hit. Now it’s fairly easy. Grab something to drink and let the mushrooms cook off their water.

Let them grill for 4 – 5 minutes, check and see if they are getting browned at all, if not let them cook longer. When they do start to brown, flip them as often as you like. Once they cook off most their water they will start to brown and char much more quickly, so really keep an eye on them so you don’t burn them.

I would say in total it took about 15 minutes for these to cook to my liking. Feel free to brush on some BBQ Sauce at the end and cook them for a few more minutes to caramelize the BBQ Sauce.

Then you’re done! Let them cool off for a few minutes, and serve however you’d like. They are great on a bun with some BBQ Sauce and Coleslaw, or Chimichurri and Pickled Onions!

Tips for grilling oyster mushrooms
- Pack the skewers relatively tight, this will help the mushrooms from moving too much when you flip them.
- Grease up the grill with some high smoke point oil so the mushrooms don’t stick.
- Be patient, the mushrooms have a lot of water in them that needs to cook out before they will start browning.
- Once they do cook out their water, they will brown and char fairly fast, so definitely make sure you don’t burn them!

Oyster Mushroom Skewers
Ingredients
- 8 oz Oyster Mushrooms
Marinade
- 1 Tbsp BBQ Rub
- 2 tsp Soy Sauce
- 1 Tbsp Hot Sauce
- 2 Tbsp Vegan Mayo (or Neutral Oil)
- 1 Tbsp Water
- 1 tsp Vinegar (or Lemon Juice)
Instructions
- Separate the mushrooms from their clusters. Cut off any long stems (you can use them in another recipe). Wash if necessary with as little water as possible and patting them dry. I don't do this unless they are visibly dirty however.
- Make the marinade by whisking everything in a bowl large enough for the mushrooms. Then add the mushrooms and, with clean hands, gently toss them in the marinade until fully coated.
- Add the mushrooms to a Skewer and pack them relatively tight, this will help them stay in place when we flip them.
- Heat up a BBQ Grill (or large skillet on the stove top) over medium high heat. Fold up a paper towel into a small square, dip it in some high smoke point oil. Then grab it with a pair of tongs, and grease the grill with the oil soaked paper towel. This will help the mushrooms from sticking.
- Add the mushroom skewers. If your grill is hot enough you should immediately see some smoke coming off of it. The mushrooms need to cook out all their water before they can get browned. This will take anywhere from 8 – 15 minutes. Just let them sit, and flip them every 4 – 5 minutes.
- Once you notice the mushrooms getting browned, check them more frequently. A little char is nice, but you don't want to burn them. Flip them as often as you see fit. You can brush on some BBQ Sauce if you like towards the end. Cook the sauce for a minute or 2 just to caramelize it, careful not to burn it.
- Once the mushrooms are cooked to your liking, remove from grill and set aside. Let them cool for a few minutes and then serve as you like! Eat then straight off the skewer or serve on a bun with some BBQ Sauce and Coleslaw or Chimichurri and Pickled Onions!

Are the handles of the skewers heat-resistant?
By the way, is it true that if you make kebab using metal skewers, that helps the “meat” cook from the inside because of the heat from the metal?
Hi, thanks! The skewers are all metal so no you can’t grab them with your bare hands. But using tongs is pretty easy with them. And yes, metal skewers cook faster from what I’ve heard!
I made these at a BBQ. Used chili oil instead of hot sauce. Prep was a lot quicker than expected. The skewers both looked and tasted great – delicious smoky flavor. Thee Burger Dude never misses
