Vegan Coleslaw

Super Tangy, Crunchy and Delicious! This Vegan Coleslaw is perfect for a BBQ, Picnic, or just Tuesday Night at Home!

Coleslaw is one of those things that’s very easy to make, but also very easy to screw up. More often than not, I wasn’t crazy about it because it was usually half mayo and thus was drowning in it!

Another issue for me, is that people will often add a lot of sugar to it, and I’m more of a savory fan when it comes to dishes like this.

For this recipe, we’ll be using a modest amount of Vegan Mayo, but of course add more if you are less modest! I did end up adding 1 tsp of sugar to balance everything out, but that’s optional and based on your taste of course.

I originally made this for my Vegan Raising Cane’s recipe, but decided it was so good it needed it’s own post!

It’s very easy to make and if you’ve found that you don’t like Coleslaw I urge you to make this ASAP! I think it’ll convert you!

Ingredients for vegan coleslaw

  • Cabbage & Carrots – Green and Red Cabbage, and Carrots are pretty standard in Coleslaw, so there’s no substitute! I recommend shredding the cabbage with a peeler or mandolin. A julienne peeler works great for carrots.
  • Vegan Mayo – This is the base of the dressing and it’s pretty mandatory!
  • Garlic Cloves – you can use garlic powder, but I really like the bite of fresh garlic.
  • Dill or Sweet Relish – I like using Dill, but if you prefer a sweeter Coleslaw you can use Sweet Relish instead.
  • Lemon Juice – For some more zippy brightness!
  • Fresh Chives – Fresh herbs always help out in a dish like this. You could also experiment with some fresh dill too.

how to make vegan Coleslaw

All you need to do is shred up your cabbage and carrots, then whisk together the dressing and combine with the shredded veggies.

If you want to make this ahead of time, I recommend shredding everything and making the dressing. Then combine 15 minutes before serving.

Storage

You can store this in the fridge for 1 – 2 days, but it’s best the fresher it is, so eat it as soon as possible!

Vegan Coleslaw

Ingredients
  

  • 4 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 – 2 carrots julienned or shredded
  • 1 – 2 cloves garlic minced
  • 3/4 cup vegan mayo
  • 3 Tbsp dill or sweet relish
  • 1 – 2 Tbsp lemon juice
  • 3 Tbsp chopped chives
  • Salt and pepper
  • Sugar as needed

Instructions
 

  • To make the dressing, combine the vegan mayo, relish (use sweet for a sweeter dressing, dill for a tangier one), lemon juice, chives and salt and pepper in a large bowl. Taste and adjust for seasoning.
  • Add in the shredded cabbage and carrots and toss to combine. Taste and adjust for final seasoning. Enjoy immediately!
