English Muffin Pizzas
English Muffin Pizzas were a classic staple of my childhood, and as an adult I love recreating them but VEGAN!

English Muffin Pizzas (or as my parents called them Little Baby Pizzas) were one of my favorite meals growing up, and I know it was one of my favorites for my parents to make as well.

Recently I’ve been making them as a quick and easy dinner too, and the good news is there’s an easy way to upgrade them!
Ingredients for English Muffin Pizzas
- English Muffins – Store-bought are the best for this recipe. If you’re vegan like me, make sure they don’t have any milk or eggs or honey! Thomas Brand are not vegan unfortunately!
- Red Sauce – You can use your favorite store-bought Pizza Sauce, or make my all purpose Red Sauce recipe for an upgrade!

- Cheese – I used Daiya Mozzarella Shreds for this one. I like to chop them up a bit too, but that’s not necessary!
- Toppings – Obviously, use whatever you like! I’ve done these with some vegan sausage and peppers, vegan pepperoni (I used the Tofurky Brand and cut them into smaller pieces).

- Garlic Butter – We can infuse some extra flavor by simply turning our English muffins into garlic bread. We just gotta mix up some vegan butter, garlic and parsley! Then give them a liberal smear and grill them until golden brown. Just make sure you don’t go too long and burn the garlic!

How to make English Muffin Pizzas
Split open English Muffins. Spread a layer of Pizza Sauce, then top with shredded cheese and toppings of your choice!
Bake for 6 – 8 minutes or until cheese is melted. Optionally, broil for 2 – 3 minutes to brown and melt it even more!
Garlic Bread Option
Combine the ingredients for the garlic butter.
Split open the English Muffins and spread a nice layer of the garlic butter.
Heat up a skillet over medium heat. Add the muffins garlic butter side down and cook until browned about 2 – 3 minutes.
Remove from the pan, spread some sauce, add cheese and toppings and bake for 6 – 8 minutes or until cheese is melted. Optionally, broil for 2 – 3 minutes to brown and melt it even more!
Toppings Note
If you want to make a sausage and peppers version, I suggest cooking the sausage and peppers in a pan first before adding as a topping! Just cook until browned and to your liking over medium heat.
