Beer Battered Onion Rings with a bit of KICK!

Beer Battered Onion Rings

It’s hard to beat Beer Battered Onion Rings. I made mine with a few extra ingredients to make them a little spicy (but not too spicy I swear!). These are killer on their own, but dipping them in some vegan ranch or BBQ sauce takes them out of this world!

Even though these aren’t spicy, you can totally leave out the ingredients such as the chipotle powder, jalapeno brine etc if you want and they will still be super good! But like I said, they are pretty mild. In fact, I might add more of the spicier elements next time.

For the onions, I used yellow. You can use sweeter onions too, Vidalia and what not. For the beer, you can use whatever you want, but I prefer a lighter beer or lager. You can also totally use sparkly water if you don’t drink beer!

Technically these are a side, but I honestly ate them for lunch, no regrets!

Cook Time 30 minutes
Total Time 30 minutes

  • 2 large onions

Dry Mix

  • 1/2 cup flour
  • 1/2 cup corn starch
  • 1/2 tsp baking powder
  • 1 Tbsp smoked paprika
  • 1 Tbsp chili powder
  • 1/2 Tbsp garlic salt
  • 1 tsp chipotle powder

Wet Mix

  • 1 1/2 cup beer or sparkly water
  • 1 cup flour
  • 2 Tbsp pickle brine
  • 2 Tbsp pickled jalapeno brine

  • Cut your onions into rings about 1/2 inch thick.
  • Place the onion rings in a bowl of ice water.
  • Let's prepare the dredging stations. Combine all ingredients for the dry mix in a bowl. Do the same for the ingredients of the wet mix in another bowl. The wet mix should be a little runnier than pancake mix. Make sure it's not too goopy! Add more beer if it's too thick, or a little more flour if it's too thin.
  • Bring a pot of oil to 375 degrees.
  • Remove onions from the bowl of ice water and pat dry.
  • Dredge each onion ring in the flour, then the beer batter. Shake off any excess. This process is easier if you use a fork and not your hands by the way.
  • Carefully place in the oil, make sure you don't crowd the pot! Fry until golden brown, then remove to cool on a cooling rack. Once all the onion rings are fried, serve by themselves, or preferably with some vegan ranch or bbq sauce.
  • ENJOY!
