Vegan Breakfast Sandwich

This quick and easy Vegan Breakfast Sandwich is my GO TO for a satisfying weekday meal, and it’s super delicious and customizable too!

I tend to hyper-fixate on breakfast foods, and this is my current one! Though I have been gone through other periods where I make these for weeks at a time. They are so simple, you really just need to season and fry up some tofu, and then you can add any protein you like. I’ll typically use some Vegan Sausage! It’s also great with my Tofu Bacon!

But you can really top it with anything you like, how about some tomato and avocado!

Ingredients for a Vegan Breakfast Sandwich

  • Bread – I like to use a Burger Bun, but an English Muffin works great too!
  • Tofu – I’m making a Tofu “Egg” Patty, but you can use Tofu Scramble or whatever Vegan Egg you like!
  • Meat – You can do whatever store-bought Vegan Meat you like, or homemade Breakfast Sausage, Tofu Bacon, or Seitan Ham too!
  • Cheese – I used Daiya Cheddar Slices for this, but use your favorite Vegan Cheese!
  • Sauces – Any condiment you like will work, I like my Chipotle Mayo or Breakfast Sauce!
  • Seasonings – to season the Tofu Egg Patty, you can use my Scramble Seasoning from my Tofu Scramble, or simply use some seasonings like Onion and Garlic Powder, Nutritional Yeast and Salt and Pepper (and Black Salt too!)

How to make a Vegan Breakfast Sandwich

Add your burger buns to a cold pan and turn the heat to medium.

While the buns get toasted cut the tofu into filets. Then cut out a circle using a cookie cutter. I bevel the edges because I’m a weirdo, so it’s totally optional!

You can use the Scramble Seasoning from my Tofu Scramble recipe, or simply sprinkle some Nutritional Yeast, Garlic Powder, Onion Powder, Turmeric, Salt and Pepper to a plate. Shake or stir to combine, then coat one side of the tofu in the seasoning.

By this time the buns should be toasted, so remove them from the pan.

Add a little oil to the pan and place the tofu patty season side down. Cook for 2 – 3 minutes or until it’s browned. Spray the unseasoned side of the tofu with some cooking oil and add some salt and whatever seasoning you’d like. Flip and add some (optional) Black Salt, followed by a slice of Vegan Cheese. Cover and steam to melt.

For the meat, you can cook some store-bought vegan sausage, or make my Homemade Breakfast Sausage, or my Tofu Bacon, or just use some Tomato and Avocado. Honestly, you can top with whatever you like!

Add some hot sauce, or my Creamy Pepper Sauce or Chipotle Mayo and dig in!

  • Add your burger buns to a cold pan and turn the heat to medium.
  • While the buns get toasted, take the tofu out of the package and pat dry. Cut the tofu into filets about 1/2 inch. Then cut out a circle the same size as the buns using a cookie cutter. Save the scraps for another meal.
  • To season, you can use the Scramble Seasoning from my Tofu Scramble recipe, or simply sprinkle some Nutritional Yeast, Garlic Powder, Onion Powder, Turmeric, Salt and Pepper to a small plate. You need about 1/2 – 1 tsp worth of the seasoning mix per Tofu Patty. Shake or stir to combine, then coat one side of the tofu in the seasoning. You can coat both sides if you like, but I just do one.
