Little Baby Pizzas

My parents made this for me on a weekly basis! English Muffin Pizzas were a classic staple of my childhood, and as an adult I love recreating them but VEGAN!

English Muffin Pizzas (or as my parents called them Little Baby Pizzas) was one of my favorite meals growing up, and I know it was one of my favorites for my parents to make as well. It was quick, cheap and easy! Even more so than calling Dominos. Back then, they would typically just get some jarred sauce and throw that on an English muffin with some cheese and then into the toaster oven. Don’t get me wrong, there were amazing! But since I’m me, I’ve been wanting to see if there were ways to make them even better!

So I did what I usually do in this kind of scenario and made some garlic butter to spread on first. Then I made a quick and easy red sauce from scratch. And then I quickly grilled up some peppers and vegan sausage. Now of course, you could go the quick and easy route like my parents, and I do that more often than not. But if you got the extra energy, I highly suggest you do as many of the upgrades as you can!

The red sauce

For the Red Sauce, we’re gonna start off with some traditional ingredients. A can of tomato puree, Italian seasonings, some crushed Calabrian chiles for heat if you like! But then to amp up the umami factor we’ll add in some nutritional yeast and mushroom seasoning. Though you could always use some tomato paste instead if you like.

This will make a lot of extra sauce that you can use for more Baby Pizzas, or some pasta, or whatever you like! Maybe some Vegan Spaghettios!

We can infuse some extra flavor by simply turning our English muffins into garlic bread. We just gotta mix up some vegan butter, garlic and parsley! Then give them a liberal smear and grill them until golden brown. Just make sure you don’t go too long and burn the garlic!

Toppings of your choice

I opted for some peppers and vegan sausage, but honestly, just like any pizza, feel free to top this however your topping loving heart desires! I suggest spreading the sauce all the way to the edges to ensure that the muffins won’t get burnt.

If you do like me, you’ll have a lot of leftover peppers and sausage. Again, this is great for more pizzas, or other meals throughout the week! Heck you could even use them in a tofu scramble like I did for breakfast the next day!

Once they are topped, all you need to do is add them to an oven at 425 F for about 6-8 minutes, and then under the broiler for 2-3 minutes or until the cheese is melted and bubbling! Little Baby Pizzas (Vegan)

Servings 2 Pizzas & Extra Sauce & Garlic Butter

Ingredients
  

  • English muffins
  • Vegan mozzarella shreds
  • 1/2 Red bell pepper diced
  • 1/2 Green bell pepper diced
  • 12 – 16 oz. Vegan sausage like Impossible or Beyond

Garlic Butter

  • 1/4 cup softened vegan butter
  • 1 Tbsp chopped fresh parsley
  • 1 – 2 clove minced garlic

Red Sauce

  • 1 28 oz. can tomato sauce
  • 2 Tbsp olive oil
  • 5 cloves garlic minced
  • 1 Tbsp Italian seasoning
  • 1 tsp onion powder
  • 1 Tbsp nutritional yeast
  • 1 Tbsp mushroom seasoning
  • 2 tsp crushed Calabrian chiles optional for heat
  • 1 Tbsp sugar if needed
  • Salt & Pepper to taste

Instructions
 

Red Sauce

  • Add the olive oil to a preheated pan over medium heat. Add in in the garlic, stir and cook for one minute, careful not to burn the garlic.
  • Add in the sauce and everything else. Stir and cook for 2-3 minutes. Taste and adjust for seasoning.

Garlic Butter

  • Combine everything in a bowl. If your butter isn't softened, you can microwave it in 5-10 second increments until it's softened.

Pizzas

  • Preheat oven to 425 F.
  • Cook the diced peppers until they are slightly softened and browned. Remove from the pan and then cook the vegan sausage until it's not raw anymore, but not completely browned. Both the peppers and sausage will get cooked further in the oven.
  • Spread some garlic butter on each English muffin. Grill them over medium heat for 2-3 minutes, careful not to burn the garlic. Remove from the pan.
  • Add a little (not too much) red sauce to each English muffin. Make sure to spread the sauce all the way to the edges to ensure the muffin doesn't burn. Then sprinkle on as much vegan cheese as you'd like, followed by the peppers and sausage.
  • Add the pizzas to a cookie sheet and bake for 6-8 minutes. Then finish them off under the broiler for anywhere from 1-3 minutes, or until the cheese is bubbling.
  • Let them cool for at least 5 minutes and enjoy!
