Vegan Ham Egg & Cheese
A Vegan Ham Egg & Cheese like the ones they make in New York, but plant-based and perfect to make in your own kitchen!

Admittedly, I’ve never had one of these from New York, but I’ve done my best to research it, and I think I’ve done a decent job of creating a vegan version at home! I can understand why it’s so beloved, as it’s tasty, has a nice balance of sweet and savory, and it’s relatively easy to make!

Ingredients for a Vegan Ham Egg & Cheese
Vegan ham
For the Ham, I’m using my recipe for Vegan Deli Ham. You can totally use your favorite store bought Vegan Ham as well!

The Bread
The Kaiser Roll is an important component, and I highly encourage you to find some at your local market bakery or wherever you think you can source some. I like poppyseed, but sesame seed or plain is good too. But the Kaiser Roll does a great job of keeping this from getting soggy and yet still remain soft enough to bite through without a workout.

The Eggs
I’m gonna be using some Just Egg for this, but you could totally use some Tofu Scramble instead!
Cheese & Condiments
I’ll be using some Vegan American Cheese (I like Follow Your Heart) and for the condiments, Vegan Mayo, and yes KETCHUP! I know some folks might flinch at this, but I swear Ketchup is key! It’s also traditional so do it right!

How to Make a Vegan Ham Egg & Cheese
First make my Vegan Deli Ham!
Split the Kaiser Roll, spread some Vegan Butter on each side, and then add to a preheated pan and grill until golden brown. Remove from heat.


Heat up the Vegan Ham in the same pan until warmed through.


Whisk the flour and baking powder into the Just Egg. Heat up a non-stick pan (ideally a 10″ pan). Add a little oil and then pour in the Egg Mixture. Season to taste with salt and pepper, then cover. Cook for about 3 minutes or until the egg has set and is firm.






Add a slice of vegan cheese to the middle, then using a spatula, fold the egg over the cheese. Do this in four folds so the egg is now a square shaped patty. Flip that over, and then top with another piece of vegan cheese. Add a little water to the pan, then cover and steam to melt the cheese.










Assemble the sandwich by spreading some Vegan Mayo on the bottom roll. Season with salt and pepper. Then add the slices of vegan ham, followed by the cheesy egg patty. Lastly, spread some ketchup on the top roll and then top the sandwich with it.






Optional but recommended, wrap the sandwich in some parchment or deli paper, then cut it in half and enjoy!

Storage & Reheating
These are best eaten fresh, so I don’t recommend making them for later. I mean, to be honest, I made a few extra, stored them in the fridge and ate them later and they were good, but not nearly as good as fresh!
