Vegan Garlic Bread Grilled Cheese

The tastiest and easiest way to upgrade a Grilled Cheese is to add garlic and make it a Vegan Garlic Bread Grilled Cheese!

Okay look, I have nothing against a classic grilled cheese, in fact I LOVE them! But simply adding some garlic, parsley and nooch to the butter elevates this beyond your basic grilled cheese! This Vegan Garlic Bread Grilled Cheese might just be better if I do say so myself!

It’s like a grown-up take on the childhood classic, and it’s just as good for dipping in some Tomato Soup of course!

In a nutshell I love these because garlic makes just about anything better! And grilling the garlic butter gets it nice and browned and toasted.

On top of that, the garlic butter recipe makes enough for about 5 – 7 sandwiches, so you can make it and have it handy to whip up a Vegan Garlic Bread Grilled Cheese whenever you get a hankering!

You can even chop it up into Grilled Cheese Croutons!

  • Bread – I like good old fashioned white bread or a soft sourdough. I personally don’t like super hard or thick bread for my grilled cheese. That said, Texas Toast is nice because it’s just double thick white bread and it can take a bit more of a pressing for better browning. Plus I just love Texas Toast!
  • Cheese – I’d go for any Vegan American Cheese you can find! I like the stuff by Follow Your Heart, Daiya has some new slices that melt decently. I found that Chao doesn’t melt as easily however. But use whatever you like!
  • Garlic – I suggest mincing the garlic as fine as you can or using a garlic press. Add as much as you’d like! I did try a version with roasted garlic but it was too mellow for me. I like the BITE of fresh garlic.
  • Butter – Any vegan butter should work great! If you use salted butter just keep that in mind when adding salt and pepper later.
  • Parsley – This adds a nice little spark of freshness, plus it’s green to make this healthy!
  • Nutritional Yeast – for a little extra cheesy flavor. Feel free to use grated vegan Parmesan if you have any too!

This couldn’t be easier! First mix up the ingredients for the garlic butter.

Then spread a decent amount on two pieces of bread.

Over medium low heat, add a piece of garlic bread with the butter down on the pan. Then 2 – 3 (or more) slices of vegan cheese, and then the other piece of garlic bread.

Use a press or spatula to lightly press down for about 20 seconds. This will help the bread get nice and browned. Don’t press for too long or you risk squashing the sandwich.

You can also cover the skillet with a lid, or the sandwich with a smaller melting dome if you want to help melt vegan cheese! It can be stubborn sometimes!

Flip and repeat on the other side, that’s it!

Grilled Cheese Tips

  • Use softened vegan butter! I’ve tried using vegan mayo in the past and the taste of butter just wins everytime. Simply slice it into tablespoon sized portions, leave it on the countertop for 15-20 minutes or until softened or you can even microwave it for 5 – 10 seconds.
  • Grill the sandwich on medium low to give the cheese a chance to melt without burning the bread.
  • Speaking of melting, cover the pan if you can to help the cheese melt as well. The smaller the cover or melting dome the better.
  • Use a press or spatula to press down the sandwich for 15 – 20 seconds so the bread gets nice and evenly browned! Don’t press for too long so you don’t squish the sandwich either though!
  • Always cut into TRIANGLES!
  • Dip it in some Tomato Soup!

Servings 1 Sandwich (with extra Garlic Butter)


  • 2 slices bread white or sourdough
  • 2 – 3 slices vegan American cheese or cheese of choice

Garlic Butter

  • 1/2 cup vegan butter softened
  • 5 – 6 cloves garlic minced
  • 2 Tbsp parsley finely chopped
  • 1 – 2 tsp nutritional yeast
  • Salt & pepper to taste


  • To make the garlic butter, simply combine everything and taste and adjust for seasoning. The recipe will make enough butter for about 5 – 7 sandwiches.
  • Spread a decent amount of the garlic butter on each slice of bread.
  • Over medium low heat, add a slice of the garlic buttered bread to a pan, butter side down. Then add 2 – 3 slices of vegan cheese of choice, then the top slice of bread with the butter facing up.
  • Lightly press down with a spatula or press for about 15 – 20 seconds to increase contact with the pan. This will improve browning. You can also cover the pan / sandwich with a lid or melting dome to help the melting process.
  • Grill the sandwich for about 3 minutes or until it's golden brown. Flip, and repeat!
  • Enjoy!
