To make the garlic butter, simply combine everything and taste and adjust for seasoning. The recipe will make enough butter for about 4 - 6 sandwiches.
Spread a decent amount of the garlic butter on each slice of bread.
Over medium low heat, add a slice of the garlic buttered bread to a pan, butter side down. Then add 2 - 3 slices of vegan cheese of choice, then the top slice of bread with the butter facing up.
Lightly press down with a spatula or press for about 15 - 20 seconds to increase contact with the pan. This will improve browning. You can also cover the pan / sandwich with a lid or melting dome to help the melting process.
Grill the sandwich for about 3 minutes or until it's golden brown. Flip, and repeat!
