Peanut Butter, Bananas, and Rice Paper Bacon on Buttered and Fried Texas Toast make for the Best Vegan Elvis Sandwich!

Like Elvis, I don’t think this sandwich needs an introduction. But if you’ve never heard of it, this sandwich was beloved by Elvis. Sometimes without bacon, but since we are making a Vegan Elvis Sandwich, it seems like a good place to add some rice paper bacon!

If you’ve never heard of it, it might sound like a weird combo. But I’ve been eating peanut butter and banana sandwiches since I can remember. And as we all know, bacon makes everything better. It’s salty, sweet, a little smokey, and very indulgent and filling! My lord is this a filling sandwich!

Why you’ll dig a vegan elvis sandwich!

Now the combination of peanut butter, banana and bacon is good enough on its own right? WRONG! For me, the reason why this sandwich works so well isn’t just because of the fillings. It’s because we are gonna butter and fry the bread. Which again, on its own is delicious.

However, what this does is it will warm up the bananas and peanut butter. The bananas will get softened and slightly caramelized, and the peanut butter will get warm and slightly runny. But not so runny that you’ve got peanut butter all over your rhinestone suit!

The flavors and textures of this sandwich are just unparalleled! And I urge you, if you or somebody is unsure about this combo, give it a try! I guarantee you can’t help falling in love with it!

Ingredients for a vegan elvis sandwich

the bananas

You want ripe but not super ripe bananas. They should be slightly browned, but not banana bread brown. I like mine so they are still a little firm. They will soften a bit after being cooked in the sandwich. If you want them mushier and sweeter, than go for more ripe of course!

the Texas toast & Butter

If you can, do this on Texas Toast, which is just thick white bread. I think sourdough would work great too! Use plenty of vegan butter so the bread gets nice and browned. You really gotta grill this sandwich as you want the peanut butter and bananas to get warmed through!

Any peanut butter you like will do! I prefer chunky!

The bacon

Use whatever vegan bacon you like, but I love my Rice Paper Bacon in this sandwich!

how to make a vegan Elvis Sandwich

This really couldn’t be easier, however there are a few things that you should do to make this sandwich experience something to remember! First, use plenty of peanut butter. Slice up about half a banana and arrange that on top.

Next goes 3-4 slices of vegan bacon. Then slather on a bunch more peanut butter on the other slice of bread and crown your sandwich with it.

Next get a good amount of vegan butter melted on a griddle over medium heat. Add the sandwich to the griddle and move it around over the butter to ensure total coverage. Use some kind of press on the sandwich for about 20 seconds or so. This will help even browning. But don’t let it sit too long, you don’t want to completely squish the bread.

After about 2-3 minutes, or whenever the bread is golden brown, give it a flip. Add some more vegan butter to the pan, let it melt, and then move the bread around in it to cover it. You could also just spread vegan butter on the bread if you like.

And that’s it, pretty dang simple right?


Other than the bacon, you really shouldn’t be storing any of this. Eat it fresh and immediately!

Servings 1 Sandwich


  • 2 pieces Texas Toast
  • 1/2 banana sliced
  • 1/4 – 1/2 cup peanut butter
  • 3 – 4 slices cooked vegan bacon
  • 2 – 4 Tbsp vegan butter


  • Spread half the peanut butter on one slice of bread. Add the sliced banana and bacon.
  • Spread the other half of peanut butter on the other slice of bread and top the sandwich with it.
  • On a griddle over medium heat, melt half the butter. Then add the sandwich and move it around to spread the butter evenly on it.
  • Add a press of some kind on top of the sandwich, just for 15 – 20 seconds or so. Make sure you don't completely squish the sandwich. Then remove the press. Cook the sandwich for about 2 minutes or until the bread is golden brown.
  • Flip and add the other half of the butter to the pan. Once melted, move the sandwich over it and spread the butter evenly again. Cook for 2 minutes or until browned.
  • Remove from heat, cut into triangles and enjoy immediately!
