Toast your English Muffins or Pan Fry in a little butter until browned.
While the English Muffins get toasted, take the tofu out of the package and pat dry. Cut the tofu into filets about 1/2 inch. Then cut out a circle the same size as the buns using a cookie cutter. Save the scraps for another meal.
To season, you can use the Scramble Seasoning from my Tofu Scramble recipe, or simply sprinkle some Nutritional Yeast, Garlic Powder, Onion Powder, Turmeric, Salt and Pepper to a small plate. You need about 1/2 – 1 tsp worth of the seasoning mix per Tofu Patty. Shake or stir to combine, then coat one side of the tofu in the seasoning. You can coat both sides if you like, but I just do one.
By this time the English Muffins should be toasted, so set them aside.
Add a little oil to the pan and place the tofu patty season side down. Cook for 2 – 3 minutes or until it’s browned. Spray the unseasoned side of the tofu with some cooking oil and add some salt and whatever seasoning you’d like. Flip and add some (optional) Black Salt, followed by a slice of Vegan Cheese. Cover and steam to melt.
For the meat, you can cook some store-bought vegan sausage, or make my Homemade Breakfast Sausage, or my Tofu Bacon, or just use some Tomato and Avocado. Honestly, you can top with whatever you like!
To freeze these, I suggest letting everything cool to room temp before assembling the sandwiches. Add a piece of vegan cheese in the sandwich if you like as well. Once the sandwich is put together, wrap it in parchment paper, and then foil. If you are storing them for more than a few days I would suggest adding them to a freezer bag as well.To reheat I highly recommend the microwave as the oven will take 30 – 40 minutes, and the muffins tend to come out chewier as well. Plus the cheese melts better in the microwave!To microwave simply heat it in the parchment paper (remove the foil!) for 2 – 3 minutes (microwaves vary) flipping halfway through. Then let it sit for a minute as it will be very hot. Unwrap it and add whatever hot sauce or condiments you like (my Vegan Breakfast Sauce is perfect) and if you wanna get real fancy, add a hash brown patty too!
