Make the rub by combining all the ingredients. Halve or leave out the cayenne if you don't like spicy stuff. You can also use your favorite store bought seasoning mix.
Drain and shred 2 (14 oz.) cans of young jackfruit in brine or water (not syrup). You can wash of the brine if you don't like the briny flavor.
Preheat a 12 inch skillet over medium heat. Add a little oil and then the jackfruit, stir to coat in the oil. Cook for about 3 - 4 minutes and add in the dry rub. I suggest adding in 1 Tbsp at first and tasting and adding more if you like.
Cook for another 2 minutes, then pour over the Vegan Buffalo Sauce, stir to combine. Taste and adjust for seasoning, adding in more Buffalo Sauce if you like. You can keep warm on low, covered if serving guests, or make all your sliders at one time.
Toast your rolls in a pan over medium heat. Then assemble the sliders with some dill pickles, the Buffalo Jackfruit, some Vegan Ranch and Chopped Chives and enjoy!

*Jackfruit "Chicken" - Instead of chicken we are using my good buddy jackfruit! You can also use some shredded tofu, or mushrooms if you like too.
