Drain and rinse the jackfruit. Then cut it or smoosh it with your fingers so that it resembles a Pulled Pork texture. You can discard the core and seeds, but I always use them. If you don't like the briny taste of the canned jackfruit, you can try boiling them in a pot of water for 5 - 8 minutes to get rid of that flavor.
Heat up a pan over medium heat and add 1-2 Tbsp of neutral oil. Add in the jackfruit, and cook until it gets slightly golden brown. About 5-6 minutes.
Add in the dry rub and stir to coat. Taste for seasoning and adjust. Cover in BBQ sauce, starting with about 1/2 cup and adding more to taste. Cook for about 5 minutes or until the BBQ sauce reduces a little and gets sticky. Remove from heat and serve on a toasted bun with pickles, onions and whatever you like!
