Get a large onion and dice it. Then heat up a large skillet over medium heat with some oil. Add the diced onions, sprinkle a little salt on them, and then and grill until browned and softened, about 10 - 15 minutes. Remove from heat and set aside.
To make the Ed's Sauce add all the ingredients to a blender, and blend until smooth. Taste and adjust for seasoning, then refrigerate until needed.
Next get a skillet up to medium heat. Brush some vegan butter or oil on your buns and then toast them until golden brown. Remove from pan and let them rest on a wire rack so they don't steam.
Next, add your burger patty. Cook for around 3 minutes.
Flip the patty, add a piece of vegan cheese, squirt a few drops of water, and then cover the pan immediately to steam and melt the cheese. Cook until the cheese has melted, about 1-2 minutes. Remove from the pan.
Dress the bottom bun with Ed's Sauce, then pickles, tomato, lettuce, cheeseburger, more Ed's Sauce, top bun and ENJOY!
