Vegan Caesar Dressing

For Serving

  • Vegan Chicken* (or Soy Curl Chicken)
  • Vegan Parmesan (Homemade or Store-Bought)
  • 1 head Romaine Lettuce (Washed and Chopped)
  • Vegan Croutons
  • Tortilla (for Wraps)

Vegan Caesar Dressing

  • Mince the garlic and capers, I like to do them relatively small and fine. Then simply combine everything in a bowl. Taste and adjust for seasoning. Store in an air-tight container in the fridge for up to 1 week.

For Serving

  • Use whatever Vegan Chicken you like! I love using my recipe for Grilled Tofu Chicken.
  • After washing and chopping up the Romaine lettuce, toss with some of the Caesar Dressings. For myself, 1 serving is about 4 cups / 140g of chopped lettuce with about 2 - 3 Tbsp of the dressing, but do this to your taste of course!
  • To serve as a salad, simply top the dressed lettuce with the vegan chicken (you can slice it or dice it as you like) and then add as many croutons as you'd like. Top with freshly grated or shaved vegan parmesan.
  • If making a wrap, simply add all of that to a large flour tortilla that's been warmed and wrap it up!
