Cut the COLD vegan butter into tablespoon sized chunks and add it to a food processor along with the flour and powdered sugar. Pulse for about 30 seconds or until the butter is broken up into small pea sized pieces.
Add the aquafaba, and blend until the dough comes together.
On a floured work surface, shape the dough into a rectangle and then roll it out about 1/8" thick. Cut into rectangles, you can measure them to be about 3x5" and make notches if you want, but either way, just try to make them all the same size. Rerolling the scraps is fine, but you might want to chill them while you assemble your first round of Pop-Tarts.
Add the bottom layer of rectangles to a parchment lined baking sheet. Then add in your desired filling, about 2-3 Tbsp worth, making sure to leave a border around the edges. After filling has been placed, using a wet finger, wet the edges of the dough, and then place another rectangle of dough on top. Seal it with your fingers by gently pinching down. You can cut off the edges once sealed if you want a perfectly straight edge, but it's not necessary.
Poke some holes in the top with a toothpick, then bake at 350 F for 15-20 minutes or until the dough has set and the edges are starting to brown.
Let them rest and cool completely on a wire rack before adding the icing.
Then add the icing and whatever toppings you like and enjoy!
