Vegan Honey

This Vegan Honey is my go-to! I like it better than bee honey. It's made with apples, sugar, and some special ingredients for some extra floral flavor!

Servings 1.5 Cups

Ingredients
 
 

  • 2 cups Apple Juice
  • 2 cups White Sugar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Corn Syrup
  • 1/2 tsp Rose Water (optional)
  • 1/2 tsp Orange Extract (optional)

For Dark Honey

  • Sub one of the cups of white sugar with brown sugar
  • 2 - 3 tsp Molasses (not Blackstrap Molasses)

For Hot Honey

  • 1 - 3 tsp Red Pepper Flakes

Instructions
 

  • Add everything to a medium saucepan and heat over medium.
  • Once you add everything to the pot, you should have a little over 3 cups worth before you start heating it. Reduce it by half, so 1 ½ cups. Depending on your stove, pot and heat, this can take anywhere from 20 - 35 minutes or longer even. Just keep an eye on it and whisk it every couple of minutes.
  • You can test the consistency by scooping out a tablespoon or so and letting it cool on a small plate. After about 5 minutes, touch it with your finger. If it feels sticky like honey it's good to go! Just measure the honey and make sure it's about 1 1/2 cups and it should be reduced enough.
  • Store in a jar and let it cool for at least 4 - 6 hours (overnight is best). You can also store it in the fridge, though it will firm up. You can let it sit at room temperature for 20 minutes or so, or just microwave it for 5 - 10 seconds. Use anyway you would use regular honey!
