Fire roast the Chile, either over the stove top or on a BBQ grill (best if you want to roast a bunch of chilies at once). When skin is blackened and charred, add the chilies to a bowl and cover with foil or plastic wrap for about 20 minutes. Then peel off the skin, and de-seed, and lastly dice them up!
Prepare the sauce by mixing the mayo with the chipotles in adobo until it’s completely combined.
Grill your buns on a pan over medium heat in a little oil or vegan butter. Once they have browned a bit, set aside.
Season the patties as you wish, then add to the pan over medium high heat. Grill on each side for about 3 minutes or until you have some nice CRUSTIFICATION.
When you flip the patties, add a slice of cheese to each, and top one with some of the roasted chilies. Add a little water to the pan, cover to melt the cheese.
After the Cheese is melted, remove from pan, assemble the burger and dig in!
