Vegan Cuban Sandwich

Ingredients
  

Sandwich

  • Vegan Cuban Bread or French Rolls
  • Vegan Ham Slices (6 - 8 per sandwich)
  • Vegan Cheese Slices (2 per sandwich)
  • Yellow Mustard (to taste)
  • Dill Pickles (to taste)

Mojo Style Jackfruit

  • 14 oz Can of Young Jackfruit
  • 4 cloves Minced Garlic
  • 1 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • 1/2 tsp Onion Powder
  • 1/3 cup Orange Juice
  • 2 Tbsp Lime Juice
  • 2 Tbsp Oil (Olive, Canola, Avocado etc)
  • Salt & Pepper

Mojo Style Jackfruit

  • To make the Mojo Style Jackfruit, drain and shred the jackfruit with your hands or a knife. I use everything, the seeds and tougher parts, but discard those if you don't like them.
  • Combine everything else in a bowl, then add the shredded jackfruit and toss to coat thoroughly.
  • In a pan over medium heat, cook the jackfruit until the liquid has been reduced and you see some browning (should take about 10 minutes).

Cuban Sandwich

  • To assemble the sandwich, split the roll and spread plenty of yellow mustard on both sides.
  • Optional but recommended, you can heat up the vegan ham in a pan for a minute or so. Then add a few slices of the Vegan Ham to your roll.
  • Next add some of the jackfruit.
  • You can add the cheese at this point, but in my tests I found that it doesn't really melt as much as I'd like.
    So this is optional, but I like to pre-melt the cheese by adding some water to a heated non-stick pan, then the cheese. The water will steam and melt the cheese and keep it from sticking to the pan.
    Then you can scoop it up with a spatula and add to the sandwich. But this is totally OPTIONAL!
  • Slap the cheese on top along with some pickles. Add the top roll and then grill the sandwich in a pan on medium heat.
    Press it with a grill press, spatula, another pan, whatever works! Obviously a panini press will be perfect if you got one!
    Once it's browned, flip it over, and repeat. Then cut in half and enjoy!
